Uroš Štefelin, our chef and head of food service in our hotel, draws the inspiration for our magnificant cuisine from his childhood years. Memories place him back to his mother's homely kitchen, scented with aromas and flavourings of traditional slovene dishes, made of buckwheat flour, beetroot, cabbage, beans. When preparing his carefully selected dishes, his mind wonders to the times when his family prepared homemade sausages and the children were indulding in dried must pears. For this reason his dishes as well as the ingredients are reminiscent of his childhood , but are prepared in a modern way with a touch of French and Mediterranean cuisine. The distinction of his cuisine is the result of his careful mixing of flavours on the same plate, different colour combinations, usage of fresh, local and seasonal ingredients and homegrown vegetables from the garden. His homemade natural ice-creams from buckwheat, pumpkin, beetroot, sour cream are an extraordinary culinary experience. He gives great importance on the appearance of each plate, because his philosophy is that the plates should evoke admiration for your eyes as well as your tastes. .
