In Bled, hotels rarely stay empty.
Restaurants, on the other hand, much more often.<\/p>\n

This is not something we could have said years ago.
Today, it\u2019s reality.<\/p>\n

After 17 years of building a fine dining story at Restaurant 1906, we made a decision: to close the restaurant for dinner service.<\/strong><\/b><\/p>\n

Not overnight.
Not impulsively.
But after years of observation, adaptation\u2014and, honestly, doubt.<\/p>\n

Hospitality Today: Between Passion and Reality<\/h3>\n

Hospitality has always been demanding.
Long days. Late nights. Working when others rest.<\/p>\n

But today, it\u2019s more than that.<\/p>\n

  • There is a shortage of staff.<\/strong> And those who are here have different\u2014justified\u2014expectations.<\/li>\n
  • Costs are rising. <\/strong>Ingredients, energy, labor. A new global disruption every few months.<\/li>\n
  • The pace is relentless.<\/strong> And often unsustainable in the long run.<\/li>\n<\/ul>\n

    Seasonality is changing as well.
    Guests are no longer tied only to July, August, and the New Year period. The season is extending\u2014which, at first glance, sounds like great news.<\/p>\n

    But it also means that the traditional \u201coff-season,\u201d when a team could finally catch its breath, is almost gone.<\/p>\n

    And in all of this, we often forget one thing:
    a hotel restaurant is not just dinner.<\/strong><\/b><\/p>\n

    It is breakfast.
    It is lunch.
    It is snacks, room service, guest requests, groups, events.<\/p>\n

    It is a full-day rhythm running in the background\u2014whether dinner is full or not.<\/p>\n

    And then there is fine dining.<\/p>\n

    Not as the only task\u2014but as the peak of the day.<\/strong>
    The plate that demands the most.
    The menu that carries the highest expectations.<\/p>\n

    For a chef, that\u2019s the goal.
    A satisfied guest at the end of the evening.<\/p>\n

    But getting there means a long shift full of different tasks, adjustments, and compromises.<\/strong><\/p>\n

    Fine dining is not just an artistic plate.
    It is a system.
    A team.
    Time.

    • For dinner? Less and less.<\/li>\n<\/ul>\n

      Not because they don\u2019t appreciate good food.
      But because they don\u2019t want to spend three hours at the table.<\/strong><\/p>\n

      Today\u2019s guest:<\/p>\n

      • leaves early,<\/li>\n
      • wants to be outside\u2014by the lake, in the mountains, exploring.<\/li>\n<\/ul>\n

        Dinner is no longer the center of the day.
        It is just one of many options.<\/p>\n

        And here comes a moment worth reflecting on.<\/p>\n

        More and more often, we see traditional hotel dining replaced by vending machines, fast food delivery, and outside food brought in.<\/strong><\/p>\n

        Not as an addition\u2014but as a solution.<\/p>\n

        This is not the future we want.
        But it is a clear signal of where the industry is heading if we don\u2019t adapt in time.<\/p>\n

        Tourism (in Bled) Has Changed<\/strong><\/p>\n

        Years ago, a hotel with a restaurant was a natural whole.<\/p>\n

        Today?<\/p>\n

        • An explosion of apartments<\/li>\n
        • Guests with their own kitchens<\/li>\n
        • More flexibility, less formality<\/li>\n<\/ul>\n

          And as a result:
          more choice, less loyalty to evening rituals.<\/p>\n

          Fine Dining Is No Longer for Every Evening<\/strong><\/p>\n

          At least not in our part of the lake.<\/p>\n

          This is not about fine dining losing its value.
          It has immense value\u2014and always will.<\/p>\n

          But today, it carries a strange paradox.<\/p>\n

          On one side, it is often too much<\/strong>:
          too expensive,
          too limited,
          too exclusive,
          too complex,
          too demanding\u2014for both guest and team.<\/p>\n

          On the other side, it is also not enough<\/strong>:
          not enough choice,
          not relaxed enough,
          not family-friendly enough,
          not \u201chotel\u201d enough,
          not playful, not bold, not extravagant enough.<\/p>\n

          And above all\u2014no longer part of everyday life<\/strong>.<\/p>\n

          So it becomes:<\/p>\n

            \n
          • something you do less often,<\/li>\n
          • something for special occasions,<\/li>\n
          • something you plan in advance\u2014not spontaneously.<\/li>\n<\/ul>\n

            It is no longer something guests automatically include in their stay.<\/p>\n

            It\u2019s ego.<\/p>\n

            A New Reality. A New Decision.<\/strong><\/p>\n

            So we chose differently.<\/p>\n

            We are not stepping away from food.
            We are not closing the restaurant.<\/p>\n

            But we are placing it where it makes the most sense.<\/p>\n

            Today, we are:<\/p>\n

            • a place for an excellent breakfast<\/strong><\/li>\n
            • one of the most beautiful brunch locations in Bled<\/li>\n
            • a reliable partner for groups and events<\/strong><\/li>\n<\/ul>\n

              Simpler.
              More accessible.
              More aligned with how guests actually live and travel.<\/p>\n
